Marinated, grilled chicken skewers served with a cool cucumber-yogurt sauce — a Mediterranean grill-night favorite.

Prep: 15 min (plus 30 min–overnight marinating) Cook: 15 min Total: 30 min active Servings: 4

Ingredients

  • 700 g boneless chicken thighs, cubed

  • 1/3 cup olive oil

  • 2 lemons, juiced

  • 4 garlic cloves, minced

  • 1 tbsp dried oregano

  • 1 tsp salt

  • 1 cup plain Greek yogurt

  • 1/2 cucumber, grated and squeezed dry

  • 1 garlic clove, minced, for tzatziki

  • 1 tbsp chopped fresh dill

  • 4 pita breads

  • 1 red onion, sliced, for serving

Instructions

  1. Combine chicken, olive oil, lemon juice, garlic, oregano, and salt in a bowl. Cover and marinate at least 30 minutes, ideally overnight.

  2. Mix yogurt, cucumber, garlic, and dill in a small bowl for the tzatziki. Refrigerate until ready to serve.

  3. Thread chicken onto skewers. Grill over medium-high heat, turning occasionally, until cooked through and charred in spots.

  4. Serve skewers with pita, red onion, and the tzatziki alongside.

Notes

If using wooden skewers, soak them in water for 20 minutes before grilling so they don't burn.
